Grandkids, pumpkin donuts and New Years Eve !

Yes, a few of my favorite things, grandkids, pumpkin donuts and New Years Eve.

For a while now I've been wanting to try this recipe for pumpkin donuts.  I even bought a donut pan to make them in ages ago. Well, I finally made them and goodness they are delicious, even without frosting and sprinkles!

Whom to share them with? Grandkids! When? New Years Eve!

     These pumpkin donuts are gluten free using whole grain oat flour.

 
I used a pastry bag to fill in each individual donut shape.

Hmmm, the first batch is missing one and three quarters donuts!
 
Two and a half dozen later. Coffee and donuts with hubby.

 
We saved a few for the grandkids!

How neat. I always thought doughnuts had to be fried. I tried making them once, and mine turned out so heavy. Yours look good, and the pumpkin makes them even healthier.

Gluten Free Pumpkin donuts
2 cups, free whole grain oat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon salt
3 large eggs, whisked
1 (15 oz) can pureed pumpkin
1/2 cup packed brown sugar
1/2 cup maple syrup
1 teaspoon vanilla extract
1/4 cup olive oil
1/2 cup buttermilk (or make a buttermilk substitute: add 1-1/2 teaspoons white vinegar to 1/2 cup milk, let sit for 10 minutes)


Put dry ingredients in one bowl mix well and wet in another bowl beat well.
Mix the dry and wet together just until smooth, don't over mix.
Lightly grease donut pan, I used coconut oil.

Fill donut pans about 2/3 rds full.
I used a pastry bag to fill donut pan.

Bake approximately. 12-15 minutes @ 420
