Almond Butter Bread

Goodness, I haven't written a post in quite a while. So to make it short and simple I thought I would write about a short and simple bread. Quick and easy. Low carb and low glycemic.

Almond Butter Bread


1 Cup Almond Butter ( or you can use your favorite Peanut Butter)
3 Eggs
1 1/2 Tbls.  Vinegar ( I used Apple Cider Vinegar)
1 tsp.   Baking soda
1/4 tsp. Salt

Sweetener: Either 1 packet of stevia, 1 teaspoon agave or 1 teaspoon honey. You don't have to use a sweetener at all. It's optional.

Blend almond butter and eggs until smooth. Add in remaining ingredients. Mix well.
Pour into a greased 8 1/2" x 4 1/2" loaf pan and smooth out the top.
Preheated oven.  Bake at 350 degrees for 30-40 minutes. Let cool before slicing.
This will make 14-15 slices of bread.

Nutritional information if you cut loaf into 14 slices. Per slice: 107 calories, 3 carbs,
9 grams fat, 5 grams protein, 2 grams fiber and 1 gram of sugar (from almond butter).
If you add another sweetener it will be slightly more.

Apple Crumb Pie

Fresh roasted coffee beans are one of my favorite scents. I love putting out coffee beans to help absorb odors at work and at home. Just a small amount of fresh roasted coffee beans works wonderfully.

This time I stuffed one of my heart keepsakes with Apple Crumb Pie roasted coffee beans. Yummy, the lovely scent of coffee and fresh apple crumb pie turned my sweet tooth on for sure. My husband even said,  "whatever you are making for dessert sure does smell good! Oh no! Now what do I do?!

Grandkids, pumpkin donuts and New Years Eve !

Yes, a few of my favorite things, grandkids, pumpkin donuts and New Years Eve.

For a while now I've been wanting to try this recipe for pumpkin donuts.  I even bought a donut pan to make them in ages ago. Well, I finally made them and goodness they are delicious, even without frosting and sprinkles!

Whom to share them with? Grandkids! When? New Years Eve!

     These pumpkin donuts are gluten free using whole grain oat flour.

 
I used a pastry bag to fill in each individual donut shape.

Hmmm, the first batch is missing one and three quarters donuts!
 
Two and a half dozen later. Coffee and donuts with hubby.

 
We saved a few for the grandkids!

Cindy Lou Who

I discovered this fun fabric print at my favorite quilt store. Perfect for a co-worker whose family teasers her when she wears her hair up like Cindy Lou Who. I couldn't resist, I just had to make a keepsake heart for her for our office Secret Santa. I filled the heart with balsam fir. A perfect scent for the holiday.
